    Beef tenderloin- One of the most sought after cuts off the steer, we have whole tenderloins as well as in-house cut fillets. Prime and choice typically available

    Ribeye- A juicy and rich cut that is world famous for its flavor. Leaving this as a whole loin is referred to as a rib roast. Leave the bones on that roast and you have a “standing rib roast”, some people like to call this “prime rib” however prime denotes the grade of beef, not so much the cut of beef. Prime and choice typically available

    NY Strip- A beautiful specimen that can take a fast sear on a grill and still come out tender and juicy, or leave it whole as a loin and roast it. Prime and choice typically available

    London Broil- A cheaper yet flavor-filled cut derived from the inside round. Prime only

    Hanging Tender “Hanger steak” is an often-overlooked cut. It can be cooked fast and furious over high heat, yielding a very deep flavored steak. Choice only

    Chuck Roll – we carry standard chuck roasts as well as boneless beef short ribs, Denver cut steaks, and chuckwagon ribeye, which all come form the chuck. Prime only

    Tri tip- A cut from the bottom sirloin is a very versatile cut, it can be grilled over medium heat if you need to get it cooked quickly. However this cut benefits from low and slow cooking.Prime only

    Top sirloin steaks- a tried and true meat lovers steak, cook it hot and fast for a good all around steak everyone will be happy with. Prime only

    T-Bone and Porterhouse- We cut these steaks right in the shop on our saw. Generally, we cut at 1.25”, which is ideal for those special occasions when you want a nice bone in steak. Choice only

    Picanha- This cut comes from the top sirloin. While traditionally most would cut this into 1.5”-2” strips and slow roast it over coals, we like to cook it as a whole roast to medium rare and slice it after a good 10-minute rest.Prime only

    Outside skirt steak- A great steak for many different dishes, sear it hot, or sous vide it until tender and finish with a very fast hot sear. Prime only

    Brisket- Weather you’re making Texas style BBQ or a classic NY Pastrami, you must have a high quality prime brisket. Prime only. We have a variety of custom cut items such as stew beef, fajita strips, and tenderized tip steaks

    Ground beef- We only sell ground beef that is derived from beef we cut at the store. That may seem like a given, however all the big box stores use pre ground meat that is processed at the packing facilitie which is why they fall victim to food borne illness scares. If there isever a recall on ground beef its almost guaranteed it wont apply toour ground beef. 90/10 is our ground beef ratio

    Aged Beef- we like to experiment with new things. We are always doing special projects with aging meat. To name a few we have done, bourbon aged, bourbon infused butter aged, and standard dry aged beef. Please contact us for current offerings or projects.

    Wagyu- we frequently have some iteration of wagyu beef, we have carried grade Australian Wagyu grade 8=9 Ribeye and NY Strip. Please contact us for current offerings.

Toasting and blending spices then mixing them in with the perfect ration of seasoning to pork or chicken. All sausages are encased in an all-natural casing.   • We source fresh, high quality pork from reputable sources in order to provide the best product possible to our customers. Certain items may not be available all the time, please contact us for current availability

    Pork Chops- We start with breaking down whole pork loins, we then carefully cut both thin and thick chops.

    Double-cut rib chops- This is an incredibly juicy and tender cut, a favorite of ours. We leave the rib attached to the loin and slice, leaving a thick mouth watering rib chop. Sear these over a hot grill and cook the center to your liking. We enjoy oursaround 140 degrees Fahrenheit.

    Baby-Back Ribs- a world famous cut of ribs. These are located all the way up on top of the rib cage closest to the rib meat or “chop”. Slow smoke them for a tender and delicious bite.

    Pork tenderloin- A succulent morsel that stays tender under any circumstances. Grill it and slice it thin, or pressure cook it to yield a lean delicious, shredded pork.

    Bone-in Boston Butt- Tried and true pork cut that comes from the front shoulders. Pressure cook it, smoke it, slow cook it however you want. This cut needs “low and slow” treatment tobreak down all the connective tissue but make no mistake your patience will be rewarded with tender juicy meat.

    Boneless stuffed pork chops- A classic offering of center cut pork carefully stuffed with savory bread stuffing.

    Traditional Porchetta- while we generally only offer this during the holidays, we can make them for any occasion. We take a gorgeous center cut pork loin, season it with spices and fresh herbs. We then wrap the seasoned loin with skin on pork belly, securing the entire thing with butcher’s twine. Roast this in the oven for an absolute showstopper pork roast. The center stays juicy while the skin on pork belly gets crispy. Minimum order is 6lbs.

  • We provide multiple qualities of chicken however we ensure that all are source from the freshest possible suppliers. While chicken is ample and available at most major grocers, we will split and trim your chicken breasts as well as wrap them however you would like. Additionally if you’re buying a whole chicken, we will spatchcock (remove backbone and butterfly) the bird for you free of charge.

    Chicken Rolls- These are a Cavallari staple. We use the center cut of the breast, butterfly them open and tenderize each piece. We then bread and season them before stuffing them with various fillings.

    Lamb is so delicious and easy to prepare. You can stew it! We can help. Whether it’s juicy lamb loin chops, french-cut rack of lamb, boneless leg of lamb roast, ground lamb, or lamb kebabs, we can set you on your way to a fantastic meal.

    Looking for veal?

    We also carry a selection of veal cuts in our freezer. Veal shank for “Osso Bucco,” veal chops, and veal cutlets to name a few. Or, perhaps you’re looking for a bird of a different feather. We also have frozen pheasants, quail, ducks, geese, cornish hens, duck breast. We also offer rabbit… but those don’t have feathers.
