I have been the beef buyer for Cavallari Gourmet Market for over 10 years now and in that amount of time I have had the pleasure of learning a lot about the interesting business of breeding and raising cattle but also the interesting business of bringing them to market, processing them, and meat packing.

Every week we do our very best to make that sure that Cavallari Gourmet Market has the best beef in Oviedo, the best beef in Lake Mary, and the best beef in the Greater Orlando area. We also do our best to make sure we can sell the best beef at the best prices we can.

I have seen a lot of “beef programs” in my time and there have been a lot of (unsuccessful) sales people who have tried to get me to sign on to one program or another.

The list goes on and on and I am here to tell you that with one notable exception all these programs seem have much more to do with how that steer looks on the outside (and what it costs) than what it cuts like and tastes like on your dinner table.

This results in a strikingly handsome animal that is enormous, quick to grow, and exceedingly lean. To the knife and on the fork this beef is incredibly tender and flavorful while being very much lower in fat and cholesterol.

The best part about all this? It was a completely natural process that allowed this breed of steer to develop these qualities! With the help of some enterprising and savvy ranchers in the Italian Alps several generations ago we now have this amazing beef today.
